Jowar or Sorghum Waffle (Gluten-Free)

Waffles are fast gaining popularity in the country. Waffles are also a guaranteed hit with kids when served with a dollop of ice-cream or tasty toppings like honey, chocolate sauce, fruits etc. Since waffles are so popular, you can have them any time of the day, sweet or savoury. My favourite type of waffles are the ones made with millets flours, which are not only healthy but tasty too.

I love millets because they are so versatile and you can experiment in so many ways unlike refined flour or even wheat flour. Each millet imparts a different flavour and colour. Baking is a great way to explore millet flours. If you haven’t tried using millet flours in your baking, I would urge you to use them first in making waffles. Firstly, it will give you an idea on how to cook with millets and secondly, taste. If you are used to refined flours, changing over may take some time but I bet cooking with millets will stay with you forever. Jowar or Sorghum flour is again a very versatile millet and not very strong in flavour. I’m sharing a basic recipe with you for jowar waffles. However, please feel free to experiment with different types of millet flours by substituting in the recipe given below. I’ve served the same waffle recipe two ways, sweet and savoury.

Savoury sorghum waffle served with creamed mushroom

 

Jowar waffles served with chocolate ganache, dusted raw sugar powder and walnuts

 

Ingredients:

(makes 6-8 medium waffles)

140 gms jowar or sorghum flour

30 gms cornflour

1 tsp baking soda

1/2 tsp rock salt

A big pinch of vanilla powder (optional)

30 gms raw sugar

1 cup warm milk

1 egg

2 tbs melted coconut oil or butter and some extra for greasing

 

Method:

Pre-heat your waffle maker. Meanwhile, measure and mix all the ingredients well. Allow the batter to sit at room temperature for 15-20 mins. Pour the waffle batter on greased waffle maker. Allow it to cook until crisp or done depending on your liking. Serve warm with your favourite topping.

 

Waffles are ready to be served with some passion fruit curd and dusted raw sugar powder
